Thai style chickpea and red lentil vegan bake flavoured with coconut, coriander, chilli and lemongrass.

Serving suggestions: Crumble on top of salad & add a dollop of cooling yoghurt. Bake / griddle & serve with rice/noodles & salad or veg. Crumble & melt into coconut milk as a base for a favourite Thai soup or curry. Use as a flatbread filling – with crunchy salad, a squeeze of lime & vegan mayo.

Ingredients: Chickpeas (49.5%), Carrots (13.5%), Red Onions, Spinach, Red Lentils (6.4%), Creamed Coconut (3.7%), Coriander, Garlic, Ginger, Lime Juice, Lemongrass, Salt, Green Chilli.

Storage: Keep Refrigerated <5°C. Suitable for home freezing for 3 months – defrost overnight in fridge and consume within 3 days.

To reheat: For best results: Remove packaging apart from tray. Place in centre of pre-heated oven at 180°C/170°C fan/Gas 5 and bake for c.20 mins ensuring food is piping hot as appliances may vary. Allow to stand for a minute or two before serving to avoid burns.
